Zoe’s recipe

Here at Broad Oak Farm we love receiving customer feedback and Zoe not only complimented us on our sausages but kindly sent us a recipe she developed so we decided it would be great to share this with you. We hope you enjoy it and thank you Zoe for sharing this.

Spicy sausage spaghetti (serves 4)
Pack of Broad Oak Farm sausages
400g spaghetti
200ml white wine
Chilli, chopped and seeded
Teaspoon rosemary
Teaspoon nutmeg
Teaspoon mixed herbs
Juice of one lemon
One garlic clove, crushed

1.      Finely chop onion and fry in a little oil until golden
2.      Add sausages to pan, crushing with fork while cooking to form a crumbly, mince-like texture
3.      As the sausage breaks down, add the herbs
4.      Gradually add the white wine to reduce down and become a sticky sauce
5.      Add the juice of the lemon and cook everything on a low heat for 20 minutes or so
6.      Cook the spaghetti and drain
7.      Coat the spaghetti with a little olive oil, then add the sausage mixture and mix well
8.      Serve with Parmesan and ENJOY!
